Apple Chicken

Ingredients:

Local 8 chicken parts
1 tsp. salt
1/4 tsp. pepper
Organic 1/4 tsp. ginger
1/4 tsp. cinnamon
Local 3 apples, cored & sliced
Local 1/4 c. water
Vegetable cooking spray

Directions:

In small bowl, mix together salt, pepper, ginger, curry and cinnamon; set aside 1/4 of this mixture (1/2 teaspoon).

Sprinkle chicken with remaining spice mixture.

Spray cooking spray in fry pan; heat over medium heat.

Add chicken and cook, turning about 15 minutes (brown on all sides).

Pour off and set aside all accumulated oil from pan.

Add water and 1/2 teaspoon spice mixture. Stir in reserved drippings.

In 2 quart dish, arrange slices of 2 apples; top with browned chicken. Slice remaining apple on top.

Pour liquid (from fry pan) over all. Cover and bake at 350 degrees for 45 minutes.
