Hazelnut Torte

Ingredients:

Torte
Local 2 tbsp flour, sifted
2-1/2 tsp baking powder
Local 4 eggs
Fair Trade 3/4 c. sugar
Local 1 c. hazelnuts
Mocha Whipped Cream
Fair Trade 1/2 c. sugar
Fair Trade 1/3 c. cocoa
1 tbsp instant coffee powder
1/4 tsp salt
2 tsp vanilla extract
Local 1-1/2 c. heavy cream

Directions:

Torte

Heat oven to 350˚.

Grease and flour (or dust with ground nuts) two or three 8" cake pans.

Sift flour and baking powder and set aside.

Put eggs and sugar into food processor and blend till lemony.

Add hazelnuts and process till well blended and nutars are finely ground.

Add flour mixture all at once, process only until flour is well mixed.

Pour batter into prepared pans and bake 20 minutes or until cake tester comes out clean.

Invert pans and cool.

Remove from pans and cool completely on wire rack.

Top with mocha whipped cream.


Mocha Whipped Cream

Put all the ingredients into a blender or mixer. Beat or process until thick.

Spread mixture between the layers and on top.

Decorate with sprinkles or whole hazelnuts.
