Blackberry Cobbler

Ingredients:

Filling:
Local 2 c. blackberries
Fair Trade 1/2 c. sweetner (1/2 tsp. stevia or 1/4 c. sugar and 1/4 stevia)
1 1/2 tsp. cornstarch
Topping:
Local 1 c. flour
1 tsp. baking powder
Fair Trade 1/2 c. sweetener equivalent (1/3 c. Sucanat)
Local 1 tbsp. cold unsalted butter
Local 1 egg
Local 1/2 c. milk (cow, almond, soy or rice)
1 tsp. vanilla

Directions:

Makes a small cobbler in a 9 inch square pan. Can be easily doubled

Filling:
Mix sweetener and cornstarch and sprinkle over berries placed in 9 inch square baking dish
Topping:
Mix flour, baking powder and sweetener in a bowl. Cut in butter with 2 knives until you have a fine meal texture.

In a separate bowl mix egg, milk and vanilla, then pour into flour mixture. Using a fork, stir the mixture briskly until well blended.

Drop spoonfuls of topping over berries. Flour mixture not completely cover them.

Bake for 40 - 50 minutes, testing middle to make sure it is cooked through.
