Carrot Muffins

Ingredients:

Local 1-1/2 c. grated carrots
1/2 cup oil
Local 2 eggs
Fair Trade 1/2 c. sugar
Local 1 tsp cinnamon
Organic 1 tbsp ground flax seeds
1 tsp baking soda
Local 1/2 c. nuts
1 c. spelt flour
1/2 tsp vanilla
1/2 cup raisins
Carrot Muffins




Directions:

Grate carrots.

Combine oil, sugar, oil, eggs, and vanilla in large mixing bowl. Add grated carrots.

Sift together dry ingredients including flax seed.

Add dry ingredients to oil mixture, mix until dry ingredients are moist.

Mix in nuts and raisins.

Preheat oven to 350˚.

Drop batter into greased or lined muffin tin and bake for 15 minutes or until muffin springs back from touch.
