Spinach Quiche

Ingredients:

1-1/2 c. Swiss cheese
Local 6 eggs
Local 1-3/4 c. milk
Local 3/4 c. yogurt or cottage cheese
Local 3/4 c. flour
1 1/2 tsp. salt
Local 3 tbsp. butter
Local 1 1/2 - 2 bunches spinach
Local 1 medium yellow onion
Optional toppings: sour cream or salsa

Directions:

Steam onions and spinach in butter.

Cut Swiss cheese into chunks and place in 12" pie plate.

Mix eggs, milk, yogurt, flour, salt and pour onto cheese chunks.

Bake at 350˚ for 45 minutes.
