Spinach Quiche

1-1/2 c. Swiss cheese |
 |
6 eggs |
 |
1-3/4 c. milk |
 |
3/4 c. yogurt or cottage cheese |
 |
3/4 c. flour |
|
1 1/2 tsp. salt |
 |
3 tbsp. butter |
 |
1 1/2 - 2 bunches spinach |
 |
1 medium yellow onion |
|
Optional toppings: sour cream or salsa |

Directions:
Steam onions and spinach in butter.
Cut Swiss cheese into chunks and place in 12" pie plate.
Mix eggs, milk, yogurt, flour, salt and pour onto cheese chunks.
Bake at 350˚ for 45 minutes.
