Sustainable Living
"One of the most important resources that a garden makes available
for use, is the gardener's own body. A garden gives the body the dignity of working in its own support.
It is a way of rejoining the human race."
~ Wendell Berry

Back in February 2009, a group of individuals purchased seats in Tom & Marty Villa-Lopoz's
Brews, Bread and Brawts" and on August 22, 2009 the bash happened. With the help of Tom
Pivonka, Mark Holzband and Ralph Cruz, Jim Reimer and Molly Monahan, the Villa-Lovoz's
provided about 30 people with delicious samples of local/organic breads, sausages, and beer.

Fish Tales Organic Amber Ale
http://www.fishbrewing.com
Olympia, OR. Medium-bodied with an appealing amber hue, this is
the First Ale of the Republic. Its organic pale, Munich, and crystal malts create a gentle
sweet character that is difficult to resist. From organic Hallertauer hops come a zesty
flavor and aroma that beautifully balance Organic Amber's malt profile. The result: Truly
delicious ale that salutes organic farmers and all the goodness they bring to our tables.
Fish Tales Organic India Pale Ale
Olympia, OR. Fish Tale Organic India Pale Ale is a medium-bodied beer with a rich
golden color. The organic pale and crystal malts lay down a firm malt body. This provides
the backbone for an assertive hop profile featuring organic Pacific Gem. The moment the
Mighty Fish Brewers sampled this pungent and resinous New Zealand hop, they knew it would be
perfect for their Organic I.P.A. The result: A Cascadian treasure.

Avenue Bread, Bellingham
http://www.avenuebread.com
At Avenue Bread, we actively seek ways of reducing our footprint on the Earth. So far, we’ve
engaged in the following sustainable practices:
• We utilize SSC’s FoodPlus program for all of our biodegradable waste products (approximately 50
percent of our total waste).
• We purchase locally, whenever possible, reducing the environmental impact of transporting goods
long distances.
• Instead of using plastic cups, we’ve opted for GreenWare cold cups and parchment wrap, paper

The breads are made from freshly ground whole grain flours which are stone milled in the store
daily. "I often default to eating a variety of foods which are as simple, organic, unprocessed, and
